These event flowers will be automatically converted into coins after the event ends, so before the deadline you can choose to either make extra moths with the flowers, or sell them all.
Unlike Flutter: Butterfly Sanctuary, there isn't really a point in making extra moths in Starlight unless you want to, and the extra moths don't sell for much, so usually I just merge my flowers and let the game sell it for me at the end of the event.
If you want to convert the flowers to honeydew, do note that 50% and 100% flowers are worth more than 10% and 20% ones. Check your flora inventory for the prices, and be sure to merge them all~!
